Homemade Alfredo Sauce with Zucchini "Noodles"

When I gave up dairy several years ago, one of the meals I missed the most was Fettucini Alfredo. I gave up white flour products (along with dairy products) after my last hospital stint in 2010. My depression disappeared, my bloated belly flattened, my painful menstrual cramps? Gone.


A miracle I thought. Obviously white flour products of ANY sort, no matter what lies are in the advertising or how "healthy" its supposed to be, caused my incredible inflammation in my entire abdomen and clearly a direct cause of my depression. Read the Wheat Belly by Dr. William Davis to learn more about why. If I had known all of this when I was 20, I would have spared myself years of suffering!!


Anyway, I digress..haha


I still miss my favourite foods but wouldn't trade them for my. good health any day...I have played around with lots of my old faves to make new and healthy substitutions...here's one of my favorites




1 1/2 cups of organic cashew milk

1 clove organic garlic

3 tbsp organic, free range butter

3 tbsp organic cream

1/2 tsp Himalayan salt

1/4 cup of chopped green onion

4 large mushrooms

1 firm tomato

2 (or more if you love your bacon) slices of crispy, fried paleo bacon



2 firm organic zucchini 

1 julienne peeler (you can get it on Amazon)


Add milk, butter, cream and salt to a saucepan and bring to just about a boil. Watch carefully because you don't want it to boil. Turn down to simmer and add garlic, green onion and paleo bacon. Move off the burner to the side.


Use your julienne peeler to cut "noodles" out of your zucchini.  The heat of the sauce is all you need to soften. Do not cook the zucchini as it will become mush.


Bring sauce back to a near boil and add mushrooms and quartered tomatoes just before serving. These will just be warmed also. 


Place noodles on a plate, pour sauce over with tomatoes and mushrooms. Serve with your choice of salad. Enjoy!
