I have used organic cashew milk for years and I buy it in a container and use as a substitute for milk in many recipes including my smoothies and my Alfredo sauce! It's fun to make as a treat if you have some extra time... I haven't drank milk in almost 9 years and can't tell you how much better I feel since I gave up dairy. I don't eat yoghurt or any other milk products, except for high quality aged cheeses. I also have used cashew milk in my cappuccinos and eggnogs at Christmas! I try to find sheep cheese whenever possible since I know that they are definitely free range and non-tortured, since sheep cannot survive without wandering. We are the only species who drinks another mammals baby milk!! It's not made for our bodies and we are no longer starving from war, nor are we hunter gatherers! Give it up, its not made for human bodies.
1 cup raw, organic cashews
6 cups filtered water
1 tsp organic vanilla, nutmeg, cinnamon (optional for flavour)
Soak the cashews overnight in 2 cups of water.
Rinse and drain the soaked cashews.
Place the cashews, 4 cups of water and vanilla in a blender and blend on high until you see the "milk".
Pour into airtight container and store in the fridge for up to 4 days. Enjoy in any recipe calling for milk or drink it on its own, poured over ice. For a nice treat, add a shot of Baileys or Kahlua!!
